We're getting married in ONE WEEK! September 4th seemed so far away but finally, our Wedding Day is just around the corner. The past several months have been a dream come true and happily ever after starts as soon as we walk down the aisle say "I do"! We can't wait for the arrival of our nearest and dearest family and friends who are travelling from all over to celebrate with us. Please keep us in your prayers as we embark on this beautiful journey and start our life together as Mr. & Mrs.!

I scooped up this little morsel from my dearest friend, MOD, as my heart is still glowing from our wonderful weekend on Pawley's Island. Our weekend love fest and teary eyed toasts have had my heart doing happy dances for days. What a delightful thought to start the week on. Happy Monday, Loves!

Prosciutto, Asparagus and Goat Cheese- Oh My!

Neglecting my blog has pretty much been the theme for 2010 but hey, I'm planning a wedding. I feel like that statement can be used as an excuse for pretty much anything these days, even though I think it sounds so silly! It has been such a whirlwind but by far the best time of my life! I can hardly believe that just two little weeks from today, I will be walking down the aisle and beginning my happily ever after.

I spent last weekend on Pawley's Island, South Carolina with my very best friends. We laughed, we cried, we sprinkled seaside pixie dust and we discovered that Sonic truly does have the best fountain drinks. Our weekend revolved around beach time in our bikinis during the day and bloggable bites at night. MOD has become quite the little kitchen fairy and I am jealous that S2H gets to benefit from her culinary creativity every day. Our first night at the beach, she whipped up an easy pizza that was absolutely delicious! I have to admit, I was a bit skeptical about asparagus on my pizza but boy was it Yummilicious. The creaminess of the goat cheese on the pizza is absolutely to die for and you can never go wrong with a little bit of salty prosciutto!

MOD's Heavenly Pizza
  • Pizza crust (if you are near a Trader Joe'sm scoot on over to get their pizza dough- it's the best!)
  • Marinara
  • Goat Cheese (crumbles or a log that you can easily crumble with your hands)
  • Asparagus (cooked al dente)
  • Sprinkle of mozzarella
If you are using pizza dough that has not been cooked yet, I always suggest popping it in the oven for ten minutes or so to begin cooking before you add the toppings. Start with the sauce and cover the crust entirely. The sauce on this pizza simply holds all of the toppings in place so no need to use a lot. After the crust is sauced, arrange the asparagus (cut into pieces) and prosciutto on top. Generously top with the goat cheese crumbles and about a handful of mozzarella sprinkled on top. Bake until the cheese is melted and the toppings are bubbling. Enjoy with people you love and a delicious glass of wine.
