Chicken Taco "Pizzas"

Say hello to one of the easiest, tastiest and healthiest weeknight meals that will ever make its way onto your dinner plate. I came across a similar recipe, kicked out the pre-made pizza dough and decided it would be not only genius, but also healthy to treat the chicken breast as the crust and top it with fresh taco seasoned goodness. Get in my belly now!

Chicken Taco "Pizzas"

Aaron's Taco Seasoning:
2 Tbsp. onion powder
2 Tbsp. garlic powder
1 Tbsp. chili powder
1 tsp. dried oregano
1 tsp. cayenne pepper
1 tsp. ground cumin
Kosher salt & freshly ground black pepper

4 boneless, skinless chicken breasts
1/4 cup olive oil
3 Tbsp. red wine vinegar
2 avocados, diced
3 vine ripened tomatoes, diced
1 small jalapeno, diced
1/2 red onion, chopped
2 cloves garlic
handful of fresh cilantro, chopped
2 small limes juiced
Salt & pepper to taste
Shredded mozzarella cheese

Start by butterflying the chicken breasts. (cutting them in half by thickness but not cutting all the way). Open them up and place in between two pieces of plastic wrap. Pound them until they are about 1/4 inch thick. This is your protein pizza dough! Mix together 1/4 cup olive oil, 3 Tbsp. of red wine vinegar and about a tablespoon of the taco seasoning. Marinate the chicken breast in this mixture for about 30 minutes.

While you are marinating, make your pizza topping. Combine the avocados, tomatoes, jalapenos, onions, garlic and cilantro. Mix with lime juice, a small drizzle of olive oil, salt and pepper. Set aside.

Using either a grill or grill pan, grill the chicken breast, about 4 minutes on each side. When the chicken breasts are cooked, arrange on a baking sheet. Top with avocado salsa and shredded mozzarella. Stick under the broiler for 4-6 minutes.


Note: This taco seasoning recipe is by far the best I have ever tried. I love making my own seasoning blends because I can control what goes in it, especially the salt. Have you seen the sodium content in those pre-made packets!? Gasp! I hope you love this seasoning as much as I do!
