Caprese Chicken


This weeknight meal deserves 5 stars! Not only was it on the table in about thirty minutes, but every ingredient is considered a staple on my grocery list. And dare I say this is good enough to share with company? I think so.

Caprese Chicken

Boneless, skinless chicken breasts (or tenders)
Fresh basil leaves
Fresh mozzarella, sliced
Roasted red peppers

For the chicken marinade:
Minced garlic
Balsamic vinegar
Olive oil
Salt & pepper

Marinate chicken for 30 minutes in the refrigerator.

Preheat oven to 425 degrees. Place on a lined broiler pan. Bake for 15-20 minutes.

When the chicken is fully cooked, top with a slice of roasted red pepper, whole basil leaf, and fresh mozzarella. Stick under the broiler for 2-3 minutes until the cheese is nice and melted. Serve with mixed baby greens tossed with balsamic vinaigrette.
