Hello, Spring!



Spring has sprung! The sun is finally shining and hopefully warmer days continue to be ahead of us. These sunny days are so bright and cheery and just make for all around better moods and extra happiness. Daylight savings time got the best of all of us this year and while waking up in the dark is still a challenge almost two weeks later, the longer daylight in the evenings is so nice. My birthday is this week and Easter is already next week! I just love this time of year. Also...the Easter Bunny needs to get his act together- ha! 

I've been extra inspired in the kitchen and making tons of new recipes. I keep a running list on my phone with recipes that I want to try and that's how I've been making my weekly menus. Here are a few of my faves from the past few weeks. 

These Jammy Eggs are as delicious as they look (especially if you love a runny yolk like I do). You can find the tutorial on her Instagram stories titled under "Jammy Eggs". I topped mine with Trader Joe's Everything But the Bagel Seasoning and fruit. So, so good.



This Radicchio Chick Pea Salad with Lemon Tahini Vinaigrette is going to be my new obsession. The dressing is to die for and the sweet bites of mint in the salad are the best. I served this with Greek Turkey Burgers and oven roasted potatoes. Or grab a rotisserie chicken and mix some meat in this salad. Easy and healthy weeknight meal!



Potato Leek Soup- another find from The Defined Dish. OH MY GOSH we loved this. So much flavor and so easy. The recipe makes a ton and I had enough for lunches all week long. It would be delicious with bacon added on top! 



And still riding the Defined Dish Train with this Paleo Sesame Chicken. Super easy for a weeknight meal and kid friendly, too! I served mine over cauliflower rice with roasted broccoli on the side. 



If you are into granola, make this now. I love it with Greek yogurt, coconut cream or just a handful as a snack when I need something sweet. I added cacao nibs to mine for a little chocolatey twist. This is the best homemade granola I've made!


And what's not to love about Guiness Brownies?! Seriously. The frosting is everything. A must make! And I'm definitely not waiting until Saint Patrick's Day to roll around to make them again.

Hello, 2018 + First Meal Plan of the New Year!




Two thumbs up for a peppermint latte but two thumbs down for no more red cups. 

If I'm being honest, the end of the holiday season always leaves me feeling a little sad. We wait and wait and wait for this time of year and then it passes us by in a blink! We soaked it all in and truly enjoyed the season but I always wish it could last a little it longer. Our twinkly tree is still thriving and glowing and we are enjoying it through the rest of this week. I need a few more snuggly nights by my tree with a Hallmark movie playing in the background. I even made a "Winter playlist" to ease me back in because I can't stop with the Christmas music abruptly. 

I do love the fresh start of a new year, though! We have been in vacation mode for awhile now and it will be nice to get back to early mornings in the gym, routine and my favorite- MEAL PLANNING! We aren't doing a true Whole 30 in January but I'm trying to keep our meals mostly Whole 30. I've found Instagram to be a huge resource for meal ideas and I have so many friends who are on board as well so I always have people to recipe swap with.

Also related to the start of the new year, I just jumped onboard with Emily Ley's 2018 Simplicity Challenge. I'm a few days behind but luckily, the past three days have been easy to catch up with. Today's challenge was to clean up your phone! It sounds a little silly, but it felt so good. I deleted apps that I don't use, turned off almost all notifications and organized everything into folders. I also deleted old contacts and moved time sucking apps to the last page of my phone. #EatMooreDinner, Vol. 6



If you are in Charlotte, HOW GORGEOUS IS THIS WEATHER!? I left for the gym early this morning and it totally felt like FALL! It's a beautiful Monday.

It's been awhile since I shared our weekly menu, so here I am. For a long time now, I have done my meal planning and grocery shopping at the beginning of the week but I think I am switching my grocery day back to Thursday or Friday. I did this a lot when we were first married and loved it. We are trying to undo the habit of always eat out on Friday and/or Saturday, so I'm thinking grocery shopping closer to the weekend will make our weekend cooking stay exciting. I always end up making the best things on our menu towards the beginning of the week and by the end of the week, I'm honestly over it. This week's menu is planned up until the weekend. I'll do another round of meal planning/shopping before the weekend which will take us through the following week!

#EatMooreDinner, Vol. 5

Popping in on this rainy menu to share our menu for the week. I was feeling totally uninspired yesterday as I made our meal plan and wrote out my grocery list but I rallied and came up with some yummy dinners. This week is looking excellent!

"Popping in" by the way...this is totally little term my mom always uses and now that I'm using it, I'm laughing to myself.

Mark is running a half marathon on Saturday here in Charlotte so on Friday night we will be carb loading- I'm thinking a favorite pizza or pasta and perhaps we will go out as a pre celebration.

#EatMooreDinner, Vol. 4


My meal planning game has been strong lately! I've tried a lot of new recipes recently- many of which I cannot wait to make again. I have said it a hundred times before here, but meal planning really does keep us on track around here. When I meal plan, I usually plan for 4-5 dinners. We almost aways eat out at least one night each weekend, do leftovers another night and have a randomly put together meal based on what I have on hand in the kitchen. With two little ones in our house, too, I like to make things that can be easily "deconstructed" for them if need be. I also add in a few "extras". Egg muffins, paleo bites, healthy muffins for the little ones- plenty of extra things to have on hand.

Another rule I try to stick to is aside from pizza night, if I'm cooking at home, we are eating mostly Paleo friendly meals. This ensures that our weeknight meals are clean and healthy, leaving room for a few weekend splurges to enjoy.

I am LOVING cooking from the new Skinnytaste cookbook, Fast & Slow. Two of my recipes this week are out of this book! Everything I've made out of here so far has been DELICIOUS. We had the Cold Peanut Sesame Chicken and Cucumber Noodle Salad last night and it was beyond good. The dressing was drinkable and because we had ZERO leftovers, I whipped up a quick batch of it for my lunch salad today.

#EatMooreDinner, Vol. 3




Good morning! Starting the week off by sharing our menu. Nothing crazy or too complicated this week...just keeping it easy and healthy. And trying my best to make things that don't dirty a ton of pots and pans because we are working with a broken dishwasher this week. As much of a pain that it is, I have to say, a broken washing machine would be far worse!!

#EatMooreDinner


My menu has been made and our fridge is fully stocked! I'll call that a successful Monday! This makes me soooooooo happy. I'm making two new recipes this week, one of which I am totally winging because I saw it on an Instagram feed and am using it as inspiration. 

I'm going to try something a little different this week, and make an effort to take a photo of our dinners this week to post next week! If you follow me on Instagram, #eatmooredinner is nothing new. My creative, hashtag savvy friend Rachel came up with it, and I use this tag for all of our dinner posts. I'm carrying it over to the blog and will hopefully have some tasty photos and recipes to share next week! 

When I meal plan, I typically plan for 4-5 specific meals. We almost always go out for dinner at least one night during the weekend and one of our at home dinners is usually something I quickly throw together with whatever we have on hand or have to use up! On my meal plan list, I also have a section for Will, a section for Kate and a section for us. Here are my extras that I'm making this week.

For Will:
- Hummus + veggie whole wheat wraps (for school lunches)
- No Bake Energy Bites
- Baked Parmesan Zucchini

For Kate:
- Mango + Kale with Ginger
- Superhero Greens with Chicken (from the Little Foodie cookbook)

Weekly Eats: Week of August 22, 2016



Popping in today to share our weekly menu since I haven't in awhile! I've been trying to make one new recipe a week to keep it fresh and add more favorites to the list! It's so easy to get in a rut so I usually keep a running list of recipes I want to try on my phone so that it's easy to access when I sit down to meal plan for the week. Keeping it fresh and healthy this week!

The Pizza Spaghetti Pie is my new recipe for the week and I'm anxious to try it! Quinoa tacos bowls couldn't be easier! I just start with a pile of chopped romaine and a few heaping spoonfuls of quinoa. I layer on tomatoes, sauteed onions, avocado, lean ground beef seasoned with Joe's Stuff and any other fresh veggies I have on hand. Finish with the squeeze of a lime- it's so tasty! The sauce from Rachel Ray's Gran'pa Emmanuel's Macaroni with Sausage and Cannelini is such an old favorite. I love it with Zoodles and it's easy to make on a weeknight.

Weekly Eats: Back on the Paleo Train

Our menu for this week is completed and a trip to the grocery store is in the works for later today. When I stick to Paleo, I don't totally omit dairy since I like Greek yogurt, but as long as we get 80-90% of our day right, we are doing great. As far as dinner planning goes, we focus on lean protein and fresh salads and vegetables. Dinner leftovers make for great lunch options the next few days. As promised, I'm posting this week's menu in case you need some healthy inspiration, too!

I mixed up a batch of Paleo Snack Bites yesterday to have on hand for the week. I was out of vanilla extract and subbed in almond extract instead. I LOVE the way these turned out- the almond flavor is fantastic!

Weekly Eats

Happy Monday, y'all! I do hope everyone enjoyed the weekend as much as we did. My Monday started off with an easy three mile run, some strength training and my favorite protein smoothie. I have already planned our meals for this week and made my weekly trip to the market, in addition to tackling an extra long work related to-do list. I would say this week is off to a productive start!!


Last week's menu looked a little something like this.




Flank steak pinwheels are much simpler than they sound, and are easy enough for a weeknight meal, but will impress dinner guests, too! Look for the recipe later this week. As most of you know, every Friday night is typically homemade pizza night at our house. I make my Neopolitan Pizza dough and our bellies are left with giant food babies! We always make roasted mushroom with arugula, prosciutto and mozzarella. This week, I used some new Black Truffle Oil from Pour Olive which was easily a life changing moment. Mushroom is a standard so the second pizza we usually mix up. I have Molly to thank for Pizza #2 with the Italian sausage, bell pepper and basil pesto. We absolutely LOVED this and will be making it again soon. Another food note? I'm currently loving experimenting with roasted fruits! I roasted some fresh mango slices with lemon olive oil for our salad last night and it was so unique and tasty! I hope this some of you inspiration for future menus at your house.

Weekly Eats


Last week was a busy one at the Moore house so I quickly made my grocery list and hoped for the best. This is very un-characteristic of me but it was sort of like a Top Chef challenge every night. And I went with it.



The star of last week's creations was definitely Tuesday's roasted vegetable salad. I could eat it every day. I roasted asparagus, green beans and grape tomatoes using my lemon fused olive oil from Pour Olive and a little salt and pepper. I mixed in some pistachios and finished it off with a splash of balsamic. This was the perfect side to our grilled flank steak. 

Mark's birthday on Saturday started with a delightful brunch, Coronas for lunch, and continued with a late afternoon margarita & fajita date al fresco- Cinco de Mayo style. The day ended with a batch of homemade ice cream. Do the words salted dulce de leche do anything to your tastebuds and heartbeat? More to come on that soon.

Weekly Eats

Last week's menu was fresh and healthy! Everything at the market is so colorful this time of year and the grill has already gotten so much love. This not only makes meal planning a breeze, but also super healthy without even trying too hard. Another win is that there is so much local produce at our market. I do love that about the area we live in- the fruits and vegetables are always so ripe and delicious. All this farmland better be good for something, right!?


For Monday's meal, I whipped up a quick marinade with tequilla, olive oil, lime juice, orange juice, salt, pepper and crushed red pepper. I let the chicken thighs bathe in the marinade for about 4 hours before Mark threw them on the grill. Paleo Shepherd's Pie was by far the rare bite of the week, but was surprisingly good. You can read my review here. The blackened chicken recipe that I used as my inspiration is from Epicurious and it was AMAZING. I think soaking the chicken in a brine prior to grilling really takes it up a notch.

Weekly Eats

So, I kind of miss sharing my weekly menu. Molly and Rachel both host menu link ups on Mondays and it's always fun to see what's cooking in everyone's kitchen. It's a great source of kitchen inspiration, too, especially when I feel like I'm in a slump. I used to menu plan on Sundays and go to the market on Mondays, but truthfully, grocery shopping on Mondays became the bane of my existence. I have been going to the market on Tuesdays because it's just a more pleasant and delightful experience than trying to fight everyone in our town on Mondays for the last bunch of fresh basil in the produce section. I have found that grocery shopping on Tuesdays results in an abundance of fresh foods that haven't been picked over, less time in line, and far less cranky McCrankersons who look as though they would rather be getting their widsom teeth pulled than shopping for groceries. I think you get the point.

Additionally, I don't always stick to our meal plans. Our week of dinners usually ends up being about 50% of what I planned for and the other 50% is a remix of what was written down in the first place. The great thing about having somewhat of a plan is that I never have to go back to the market and if we switch things up, it's made to work based on what's in the kitchen and nothing goes to waste.

With that being said, I'm going to continue to do meal plan posts but instead of sharing what we're going to eat, I'll back track and share what we actually ate! Hopefully I will be able to incorporate more pictures and share new recipes I tried or new ones I'm looking forward to posting.

Weekly Eats: Lean, Clean & Green

After a weekend of many magical birthday treats, it's time to get back to lean and clean eats this week. With that being said, I won't be posting our weekly menu since we'll be sticking to lots of lean protein with veggies and salads this week. We try to stick to this formula most of the time but after a weekend of nonstop eating, it feels good to really focus on putting super healthy things on our menu.

I flipped through the April issue of Cooking light yesterday morning while drinking my coffee and there are so many delicious things that I can't wait to try! There are always a lot of fresh, healthy ideas that inspire me as I travel through the pages. If a recipe isn't as clean as I would like it to be, I clean it up myself and merely use the recipe as a guide. When you start doing this, it becomes second nature!

Greek Country Salad (one of my very first recipes I EVER posted!)

You can make even the pickiest of vegetable eaters eat vegetables simply by adding olive oil, salt, pepper and roasting them! Broccoli, green beans, carrots, eggplant, tomatoes...I roast them all and Mark seems to gobble it up.

Roasted Red Pepper Pistachio Pesto tastes good on just about anything (even scrambled eggs) and something like an Olive Tapenade, that seems so fancy, really is so simple.

As the Tone it Up! girls say, it's a "lean, clean, and green week" around here!

Diaries of a Derailed Menu Plan


Well, it hasn't taken long for this week's menu plan to totally derail and take a different course than I had planned. You see, that's the case a lot around here. I mentioned this last week, but sometimes, we just go with the flow. Just because I make a neat and tidy plan, doesn't mean that I always stick to it. But truthfully, it is more than okay. The purpose of my meal plans is really to just use as a guide.

Monday, I packed up my work bag and headed into the office for the last half of the day. This was unexpected and not how I had planned my day. I was planning on going to the market mid-afternoon for our week's worth of groceries. (Plan, plan, plan...can you tell I'm a compulsive planner!?) On my way out the door, I grabbed some chicken thighs that I had in the freezer and set them out to thaw. I knew I had some avocado, tomato, bacon, and romaine. Grilled chicken thighs and BLT salad with avocado was dinner. This automatically slides Monday's salmon to Tuesday night, and you get the rest.

Fast forward to Tuesday evening, when it's time to start making dinner. Mark told me that he had salmon for LUNCH. Of course, I expected him to pay attention to the menu on the fridge and know that since we didn't have salmon on Monday, that he should clearly KNOW we were going to have salmon on Tuesday, and that he should plan his meals accordingly. Duh. Well, the menu was in my purse, a lovely place for it to be. I quickly threw flank steak in my go-to marinade and made a fresh chopped salad and roasted red pepper pistachio pesto to eat with our flank steak. The yummy Thai marinade that was the highlight and most drool-worthy item on this week's menu will have to wait for another week.

The moral of this story is an obvious one- just go with the flow. Granted, it's just the two of us and we don't have mini mouths to feed so for right now, this is what works for US. I learned from my mom to keep a well stocked pantry as well as fresh items that are always good to have on hand. The pepper pesto has become a favorite around here and pairs well with any meat and even on pizza. Pistachios, roasted reds, and garlic are staples around here. Fresh chopped salads are another thing that I'm always prepared to throw together. I start with a can of beans, a can of artichokes, and add any other fresh veggies I have! (it also makes excellent leftovers for lunch). Perhaps this is inspiration for another post- those items that I always replenish once they have been used.

So there you have it, real life in my kitchen. I'll work on a post with my kitchen staples soon! It makes dinner menu changes on a whim much, much easier.

Weekly Eats


My menu is up and ready to go for this week! I sat down with my Pinterest food boards and looked for some inspiration, as well as my freezer, fridge, and pantry to check and see what I have waiting to be used. Had I known that the weather was going to be back deck-margarita-drinking-let's fire up the grill-weather, I would have planned for more meals for my grillmaster to cook outdoors. The warm weather is here to stay, at least through this week, so you better believe we'll be taking advantage of it. Someone in our house has a birthday this week and I think that a weekend full of fun and cupcakes is in order.


Tuesday- Thai Flank Steak + Asian slaw with peanut dressing (similar)

Wednesday- Grilled chicken + Spinach strawberry salad with goat cheese, pistachios, and balsamic

Thursday- Pulled pork taco salad with guacamole

Friday- My birthday!!!

Saturday- TBD

Sunday- Grilled steaks with pepper & caper salsa + baby greens salad

Weekly Eats


It's Monday again and my menu is ready for the week. It was a lovely Spring weekend here and Mark and I enjoyed Saturday lunch at a new Greek cafe in our little college town. This should explain the two nights of Greek inspiration that we have on this week's menu. If I wasn't Italian, I do believe that based on food, I would choose to be Greek.



Monday- Greek lamburgers with tzatziki and greek salad (Bachelor finale night calls for an extra glass of wine!!)

Tuesday- Roasted pork tenderloin, mashed sweet potatoes & stuffed mushrooms (because I have a container of baby bellas that have to be eaten up)

Wednesday- Grilled Italian sausage with peppers & onions and salad

Thursday- Greek chicken lettuce wraps with tzatziki

Friday- Baked Tilapia and salad with greens, strawberries, pistachios, goat cheese, and balsamic

Saturday- Happy St. Patrick's Day! Must find dinner out and a green brew.

Sunday- Steamed artichokes, steaks on the grill and Caesar salad

Having a meal plan is nice, but we don't always stick to it 100%. My goal is to plan out our meals so that I only have to go to the store one time each week. Tuesday may be a day that I have to go into the office instead of working from home. If that is the case, I'll find a slow cooker pork recipe that I can leave cook all day while we're at work. My market usually has ground lamb but if they are out or if the price is outrageous, I'll use the ground turkey that I already have in the freezer. I frequently swap meals, too depending on what we're in the mood to eat. The point is that with somewhat of a plan, a week's worth of groceries and a well stocked pantry makes a huge difference. I just shop and plan according to what works for us and I tell others the same.

Weekly Eats



We are back from a whirlwind week in Charlotte and Atlanta and we were hit hard with reality when we woke up to a fresh blanket of snow! Maybe my blood grew thinner while I was at home because returning to 35 degree weather last night was a harsh "welcome back!" Compared to last winter's tundra like weather on an almost daily basis, this winter has been a walk in the park.

Being on vacation is always a fun excuse to indulge in extra treats but now that we are settled back at home, we're back to our regularly scheduled eating program. Lean protein, yummy salads, and lots of flavor!

Meal planning is one of my favorite things to start off a fresh week with. I have found that it works really well to plan out seven days of meals in order to minimize trips to the grocery store. I am slowly learning to enjoy my hour or so of time in the grocery store each week to ensure that we have a stocked fridge with all of the makings of a delicious week. Today, I'm linking up with sweet Molly, from Duchess of Fork, who has been sharing her weekly menus and I thought I would join in and do the same. It's always entertaining to see what everyone else in blogland is cooking up in their kitchens and it's a great way to add more recipes to my growing list!

Monday- Perfect Roast Chicken, Avocado, Tomato & Mozzarella Salad

Tuesday- Turkey Meatloaf, roasted asparagus or roasted green beans

Wednesday- Salmon, grilled peach baby greens salad

Thursday- Eat up leftovers!

Friday- Bunless burgers, sweet potato fries
